The Classic Greek Souvlaki

While gyros often takes the spotlight, the Greek souvlaki is a beloved classic that holds a special place in the country’s rich foodie tradition.

The word Souvlaki means “little skewer” and is similar to a shish kebab.

Deeply-rooted in Greece’s historical ties with Turkey and the Eastern Mediterranean, done right this dish is a masterclass in seasoned, flame-cooked comfort food.

Unlike the vertical spit used for gyros, authentic Greek souvlaki are crafted from chunks of meat, traditionally lamb, pork or chicken. The meat is kneaded with fragrant spices like ground cumin, sweet paprika, coriander, and fresh parsley, along with grated onion and garlic.

Threaded onto long, flat metal skewers, the souvlaki are grilled directly over glowing charcoal embers, giving them a smoky char on the outside while keeping the inside tender and juicy.

Served alongside perfectly-crispy chips or rice and salad, the skewers are typically garnished with oregano and lemon for that unique Greek flavour.
